Jamaican Jerk Spice Ingredients

2 tb Cayenne pepper; (up to 3) 2 ts Thyme; dried
1 ts Cinnamon; ground 1 tb Sugar
1 ts Nutmeg; ground 1 tb Dried minced onion
1 ts Allspice; ground 1 tb Salt
2 ts Chives; dried

Instructions for Jamaican Jerk Spice

These are some pretty good recipes for chileheads. The original recipes were from Emeril, but I have kicked it UP! I have used Hbs dried and powdered for the Jerk Spice mixture. If I had access to Datil Peppers I think that would be the best! Combine spices in a bowl by hand or in food processor. Store in an airtight container.
