Indian Mint Pesto Ingredients

1 cup Mint leaves tightly packed4 teaspoons Lemon juice
2 tablespoons Jalapeno finely chopped3 tablespoons Almond butter
2 tablespoons Onion finely chopped Salt to taste
1/2 teaspoon Fresh ginger finely chopped

Instructions for Indian Mint Pesto

Combine all the ingredients in a food processor and puree until the mixture is smooth, for about ten to twenty seconds.

Yield: 1 cup (250ml)

You can also add cilantro to this. We make it in fair sized patches and freeze the pesto in 2 oz (ice cube sized) servings. It keeps up to 6 months in the freezer.
