Ingredients

  • 1 cup Mint leaves tightly packed
  • 2 tablespoons Jalapeno finely chopped
  • 2 tablespoons Onion finely chopped
  • 1/2 teaspoon Fresh ginger finely chopped
  • 4 teaspoons Lemon juice
  • 3 tablespoons Almond butter
  • Salt to taste

Preparation

Combine all the ingredients in a food processor and puree until the mixture is smooth, for about ten to twenty seconds.

Yield: 1 cup (250ml)

You can also add cilantro to this. We make it in fair sized patches and freeze the pesto in 2 oz (ice cube sized) servings. It keeps up to 6 months in the freezer.
