Italian Breakfast Casseroles Ingredients

4 md Red potatoes, sliced 1/2 lb Thinly sliced fully cooked
2 tb Cooking oil 2 c Prepared spaghetti sauce
8 Eggs, lightly beaten 1/2 c Shredded mozzarella cheese
1 tb Butter or margarine 1/2 c Shredded cheddar cheese

Instructions for Italian Breakfast Casseroles

In a skillet, fry potatoes in oil until tender, about 10-15 minutes. Place in the bottom of four individual 16-oz. baking dishes. In the same skillet, scramble eggs in butter until set; spoon over potatoes. Top with ham. Pour 1/2 cup spaghetti sauce into each casserole; sprinkle with cheese.
