Italian Corn Crusted Baked Fish Ingredients

2 c Chopped tomatoes 1 lb Haddock, sole or cod
2 tb Minced garlic Grated Parmesan cheese
1/4 c Olive oil 1/2 c Yellow cornmeal mixed with
1 tb Thyme or oregano Salt & pepper (1/2 tsp. ea)

Instructions for Italian Corn Crusted Baked Fish

Mix tomatoes, garlic, oil & thyme in bottom of baking dish. Dip fish in cornmeal & place in dish. Bake at 450 for 20-26 minutes. Top with cheese. File ftp://ftp.idiscover.co.uk/pub/food/mealmaster/recipes/mmkah001.zip

Delicious! I used some marinara sauce instead of the chopped tomatoes and oil and it came out great.

Very tasty and very simple. We don't grate the parmesan onto the dish until after it comes out of the oven. Adjustments I think I'll make next time - half the oil and some extra tomato.

Its deleciouse , my husband loved it .. i didnt use cornmeal and tomato .. i just merinade it with the other ingrediants and i put the cheese in the last few minutes cooking to be melted and brown..

Great flavour. We used fresh??? haddock and 4 cloves of garlic. I put the cheese on the fish in the last few minutes of cooking and then turned on the broiler to melt and brown the cheese a little. I will be making this one again.
