Italian Style Fish and Vegetables Ingredients
2 tb
Olive oil
1 1/2 lb Fresh or frozen sole, thawed
1 md Sliced
onion
1/4 ts
Salt
2 1/2 oz Jar sliced drained
mushroom

1/4 ts
Pepper
1/2 ts
Basil
2 md
Tomato
es, sliced
1/2 ts
Fennel
1/3 c Grated
parmesan
cheese
2 c Frozen mixed vegetables
Instructions for Italian Style Fish and Vegetables
1. In a large skillet over medium heat, heat the oil. Add the onion, mushrooms, basil and fennel. Saute 4 minutes or until onion is tender. 2. Stir in frozen vegetables. Place fish over vegetables, sprinkle with salt and pepper. Arrange tomato slices over fish. Reduce heat to low,cover and cook for 12-16 minutes or until fish flakes with a fork.
