Jamaican Jerk Rub #3 Ingredients

1 Whole onion; finely chopped 1 ts Jamaican pimiento; (allspice
1/2 c Scallions; finely chopped 1/4 ts Nutmeg; ground
5 Whole hot chile peppers; 1/2 ts Cinnamon; ground
2 ts Fresh thyme leaves 1 ts Black pepper; ground
2 ts Salt

Instructions for Jamaican Jerk Rub #3

Mix together all the ingredients to make a paste. A food processor fitted with a steel blade is ideal for this. Store leftovers in the refrigerator in a tightly closed jar for about a month.
