Kassaundi (Aubergine Pickle) Ingredients

3 kg Aubergines, peeled and cubed 1 1/2 c Chilli powder
1 1/2 c Salt ts Tbs turmeric
4 c Sugar 4 tb Mustard seeds
4 c Oil (up to 5) 4 tb Cummin seeds
5 c Vinegar 4 tb Fenugreek seeds
1 1/2 c Tamarind (soaked in vinegar 1 lg Piece of ginger (about a 10
1 Handful curry leaves 10 Pods garlic
SPICES

Instructions for Kassaundi (Aubergine Pickle)
