Leek Soup Ingredients

1 1/2 lb Leeks (about 6 cups) washed, 1/2 c Tomatoes, chopped
3 c Chicken Broth 1/2 c Carrots, thinly sliced
2 Apples, peeled and cut into 1 tb Fresh basil OR 1 1/2 t dried
1 Potato, peeled and thinly 1/2 ts Curry Powder
1/2 c Orange Juice Salt and Pepper to taste

Instructions for Leek Soup

Combine all ingredients in a soup kettle. Cover and bring to a boil. Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth.
