Lous Cabbage Casserole Ingredients

1 md Cabbage; chopped fine 1 md Onion; chopped
2 tb Flour 3/4 c Bread crumbs
1 c Velveeta cheese; cubed 1 tb Bacon grease
1 c Milk Salt and pepper; to taste
1 cn Cream of chicken soup

Instructions for Lous Cabbage Casserole

Boil cabbage 10 minutes, drain and rinse. Saute onions til clear in bacon grease (could use butter, margarine or oil instead). Remove from pan. Mix flour with remaining bacon grease. Add a little butter if necessary to make a paste. Add milk, soup and cheese. Return onions to pan. Season to taste. Cook until thickened, stirring CONSTANTLY. Put cabbage in a casserole dish. Pour sauce over and and mix. Sprinkle breadcrumbs over top and dot with margarine. Cook in 350 degree oven for 20 minutes. If breadcrumbs are not brown, turn on the broiler element for a couple of minutes. NOTES : This is a combination of three cabbage casseroles in Potluck on the Pedernales p. 117-118. One is Cyns. Cyn says they eat this on New Years Day. Black-eyed peas are for luck, but the cabbage is for money! It worked for her!
