Date: Wed, 15 May 1996 19:16:54 -0400 (EDT) From: Eileen Westgate From a "lurker" comes this recipe based on Johann Gilleans scrumptious rich potatoes. Johann is co-owner of Al Forno restaurant in Providence RI and has appeared with Julia Child on TV. For original see her cookbook. Boil the potatoes with their skins on until they are fork tender. Drain. Mash with skins. Add minced garlic and lemon zest. Add skim milk and mix well. Amount of skim depends upon whether you prefer thick or liquidy mashed potatoes. For a non-lacto version, use hot potato water instead of skim milk. Salt and pepper to taste. Use leftovers the next day as potato pancakes. Mince onion. Form potatoes into patties and coat with onion. Reheat in a Teflon frying pan. Oil would help them to brown, but they are delicious just reheated.
