Mediterranean Chicken-And-Rice Salad Ingredients

Red wine vinegar
1/2 c
Drain

1 1/2 tb Extra-virgin
olive oil
1/4 c Medium pitted ripe
olive

ground pepper
1/4 c Chopped fresh
chives

Garlic

1/4 c Chopped fresh
basil
3 c Cooked long-grain
rice
1/4 c Chopped fresh
oregano
1 1/2 c Diced cooked
chicken breast

Instructions for Mediterranean Chicken-And-Rice Salad
1. Combine vinegar, olive oil, pepper, and minced garlic in a small bowl. Set dressing aside. 2. Combine rice and remaining ingredients in a large bowl. Add dressing; stir until well-blended. Yield: 4 servings (serving size: 2 cups).
