Mediterranean White Bean Soup Ingredients

2 c White beans note) 8 oz Can water-packed artichokes
7 c Water 4 oz Can sliced
1 Onion, chopped 8 oz Can tomato sauce
6 To 7 cloves minced garlic 1 ts Italian herb mix
2 Potatoes, peeled and

Instructions for Mediterranean White Bean Soup

place the beans in a large pot with the water. cover and cook over medium heat for 1 hour. add the onion and garlic and continue to cook until the beans are tender, 1 to 1 1/2 hours. add the potatoes and cook another 20 min. add the remaining ingredients and cook for about 10 more min. note: if you soak the beans overnight, the total cooking time may be reduced by 30 min. _New McDougall Cookbook_ From: ESILVA@ada.npt.nuwc.navy.mil.
