Mikes Moms (Shirley) 7-Layer Casserole Ingredients

1 c Uncooked white rice 1/2 c Diced green bell pepper
1 c Frozen whole kernel corn 1 lb Lean ground beef
2 cn 8 oz tomato sauce 4 sl Bacon
1/2 c Diced onion Salt and pepper

Instructions for Mikes Moms (Shirley) 7-Layer Casserole

Place ingredients in 2 quart baking dish in this order: 1. Rice 2. Corn 3. Salt and pepper to taste. 4. 1 of the 8 oz cans of tomato sauce and 1/2 can water. 5. The half cup of onion and the half cup of bell pepper. 6. Ground beef. 7. Some more salt and pepper to taste. 8. The last can of tomato sauce with 1/4 can of water. 9. Cut the bacon in half and use to cover the casserole. Cover the dish, bake at 350 F for 1 hour. Then uncover and bake for about 30 minutes more until bacon is crisp. This was one of my mothers best endeavors when I was a growing young man. Mom was kind enough to share the recipe with my bride of almost 25 years.
