Mixed Bean Vegetable Soup Ingredients

2 c Mixed dried beans, washed 1 cn (16-oz) tomatoes, undrained
8 c Water 2 c Sliced carrots
1 Clove garlic, minced 1 1/2 c Shredded cabbage
1 lg Onion, chopped 1 c Chopped celery
2 tb Lemon juice 1/4 c Chopped green bell pepper
2 tb Honey Beef bouillon to taste
2 Bay leaves Salt and pepper
1 cn (24-oz) vegetable or tomato

Instructions for Mixed Bean Vegetable Soup

(From Spiral Co-op Natural Foods, Hastings, MN) In large container, cover beans with 3 quarts water. Soak overnight (minimum 12 hours). Rinse and combine in large soup pot with 8 cups water, garlic, lemon juice, honey and bay leaves. Simmer, covered, for 2 hours. Add remaining ingredients and simmer, covered, for 1/2 to 1 hour, depending on size of vegetables. Remove and discard bay leaves before serving. Substitutions on vegetables is encouraged.
