Mixed Citrus Salad a la Greens Restaurant Ingredients

4 c Spring Lettuce Mix 1 c Herb croutons
2 Blood oranges; peeled and 1/3 c Lemon juice
4 Kumquats; sliced thin with 1/2 c Salad oil
1/2 Papaya; cut into 1" slices Salt and pepper

Instructions for Mixed Citrus Salad a la Greens Restaurant

In a large bowl, add the spring mix, blood oranges, kumquats, and papaya, and gently toss. Add the oil, lemon, salt and pepper more or less to taste and toss again. Sprinkle with the croutons, lightly toss, and serve.
