Morning Glory Bread (Motts) Ingredients

2 1/2 c All-purposed flour 1/2 c Chunky Apple Sauce
2 ts Baking powder 3 Egg whites
1 ts Baking soda 1 tb Vegetable oil
1/2 ts Salt 1 tb Molasses
1/2 ts Ground cinnamon 3/4 c Finely shredded carrots
1/4 ts Ground nutmeg 1/2 c Raisins
1/4 ts Ground allspice 1/3 c Drained crushed pineapple in
3/4 c Granulated sugar 1/4 c Shredded coconut
3/4 c Firmly packed light brown

Instructions for Morning Glory Bread (Motts)

Preheat oven to 375F. Spray 8-1/2 x 4-1/2 inch loaf pan with nonstick cooking spray. In large bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice. In medium bowl, combine granulated sugar, brown sugar, apple sauce, egg whites, oil and molasses. Stir apple sauce mixture into flour just until moistened. Fold in carrots, raisins, pineapple and coconut. Spread into prepared pan. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Invert onto wire rack; turn right side up. Cool completely. Cut into 16 slices. Notes: Pantry: Motts Chunky Apple Sauce; Grandmas Molases.
