Mtedza Soup (Peanut Soup) Ingredients

1 c Peanuts -- roasted & 1 ts Oil
Chopped 1 ts Flour
1 c Milk 1 c Vegetable stock
1 Onion, chopped Salt and pepper

Instructions for Mtedza Soup (Peanut Soup)

Peanuts are a major source of protein in many African countries and the major source of oil in East Africa. Peanut flour is used as a thickening agent when preparing soups and vegetables. Mix the peanuts with milk and onion in a pot. Simmer gently until soft and creamy. Using a potato masher or sieve, puree the mixture and remove from the pot. Add oil to the pot, add flour and mix to create a roux. Slowly add the stock, stirring well, and bring to a boil. Add the peanut mixture and simmer 5 minutes before serving.
