Muffins, Coffee Walnut Chocolate Chip Ingredients
1/2 c Unsalted
butter
2/3 c
Milk
1/2 c
Brown sugar
1 3/4 c
Flour
1/2 c White
sugar
1/2 ts
Salt
3 tb Instant
coffee
1 tb
Baking powder
2 ts
Vanilla
extract
3/4 c Semi-sweet chips
2 Whole
eggs
1 1/2 c
Walnut
s, coarsely chopped
Instructions for Muffins, Coffee Walnut Chocolate Chip
Preheat oven to 350. Grease and flour tin. Dissolve the instant coffee in the vanilla extract. Cream butter with the sugars, coffee and vanilla. Beat together the eggs and milk. Combine the flour, salt, and baking powder. Alternately add the wet and dry ingredients to the butter mixture. Stir just to combine. Add chips and walnuts. Fill tins full. Bake 25 minutes.
