Instructions for Neils Chicken Nugggets

Im going to try eating more healthy this year. So far so good ;) Neil made some chicken nuggets last night that were very good. He basically threw some bread crumbs in a little baggy, with cajun spices and red & black ground peppers. He then took no more than a teaspoon of oil, and tossed the pound or so of bite-size chicken breast pieces in the oil.

From there, he put the chicken in the bag with the bread crumbs and got them nice and coated. Then he baked them. Mmmm. Nice, spicy, and low in fat.

This "Oven Fried" technique works well with fish also. Try adding a bit of cornmeal to the crumbs for a crisper crust.

We baked at 350 for about 30 minutes. Turned out perfect. Easy to experiment with other spices also!!
