Omies Carrot Pudding Ingredients

3 tb Butter 2 Eggs
1 c Sugar 2 c Grated raw carrots
1/2 ts Salt 1 c Flour
1/2 ts Cloves 1 ts Soda
1/2 ts Cinnamon 1 ts Lemon juice
1 ts Grated lemon rind

Instructions for Omies Carrot Pudding

Cream butter and sugar. Add eggs. Beat well. Add carrots, spices, salt and flour and soda. Beat well. Add lemon rind and juice. Pour into a greased mold or coffee can. Steam in hot water for 2 hours. Serve with ice cream sauce or hard sauce. NOTES : Dont be afraid to use a coffee can if you dont have a mold. It does a very nice job as a substitute.
