Warm Kumara Dip Ingredients
2 md Kumara
1 ts Prepared chilli
1
Onion
1 ts Ground
cumin
1 Clove
garlic
1/4 c Stewed
apple
or canned apple
1 ts Peanut oil
Instructions for Warm Kumara Dip
Peel kumara and cook in boiling salted water for 20 minutes or until tender. Drain well reserving 1/4 cup of cooking water. Peel onion and chop. Crush, peel and chop garlic. Heat oil in a frying pan and saut? onion and garlic for 5 minutes or until clear. Add chilli and cumin. Place cooked kumara, reserved cooking water, onion mixture and apple in the bowl of a food processor blender. Process or blend adding 2 tablespoons of cooking liquid, until smooth.
