Vegetable Curry Ingredients

1 tb Vegetable oil 2 c Cubed peeled potatoes
1 c Chopped onion 2 c Chopped tomatoes
2 1/2 ts Curry powder 2 c Broccoli flowerets
1 ts Ground cumin 2 c Carrot slices
1 pn Crushed dried red pepper 4 c Hot cooked rice
1 c Half and half 1/4 c Fresh chopped cilantro

Instructions for Vegetable Curry

Heat oil in large nonstick skillet. Cook onion in oil until tender, about 10 minutes. Stir in curry, cumin and red pepper. Stir in half and half. Add potatoes and 1 cup of the tomatoes. Cover and simmer 10 minutes, stirring occasionally. Add broccoli and carrots. Cover and simmer about 7 minutes, stirring occasionally. Season with salt and pepper. Serve over rice.
