Preheat the oil for deep-frying to 190 C, 375 F. Prepare the vegetables: Cut the courgettes into 1cm ( 1/2 inch) slices, leave mangetout and sweetcorn whole, quarter the onions and slice the red pepper into 2. 5cm (1 inch) slices. Leave them to drain on kitchen paper to absorb the moisture. To make the batter, sift the dry ingredients into a bowl, then beat in enough water to make a thick coating batter.
