Ingredients
- 4 Vine-ripened tomatoes;
- ; fine (about 2 cups)
- 6 sl Bacon; cooked until crisp
- ; and crumbled
- 1/4 c Finely chopped sweet onion;
- 2 tb Olive oil; (preferably
- ; extra-virgin)
- 2 ts Balsamic vinegar; or to
- 24 Outer Bibb lettuce leaves;
- ; washed and patted
- ; dry
- 1/4 c Finely shredded fresh basil
- ; basil sprigs for garnish
Preparation
In a bowl toss together tomatoes, bacon , onion, oil, vinegar, and salt and pepper to taste. Spoon mixture into lettuce leaves and sprinkle with shredded basil.
