Three-Bean Salad Ingredients

1 cn Yellow hominy; rinsed, 1 1/4 c Chopped red onion
; (15-ounce) 1 c Chopped fresh cilantro
1 cn Black beans; rinsed, drained 3 tb Fresh lime juice
; (15-ounce) 1 tb Olive oil
1 c Drained canned kidney beans; 2 1/2 ts Chili powder
1 c Drained pinto beans; rinsed 2 1/2 ts Ground cumin
4 lg Tomatoes; seeded, chopped

Instructions for Three-Bean Salad

Combine all ingredients in bowl. Season with salt and pepper. (Can be made 4 hours ahead. Cover and chill.) Serves 6. Bon Appetit March 1995 Converted by MC_Buster.
