Sweet Potato Casserole Ingredients

3 md Sweet potatoes; (about 1-1/2 1 Bay leaf
2 lg Baking apples; (about 1 1/2 c Orange juice
1 ts Ground cinnamon 2 tb Margarine; melted.
1/2 c Firmly packed brown sugar

Instructions for Sweet Potato Casserole

Preheat over to 400F. In an 8 or 9 inch square baking dish, coated with vegetable cooking spray, place potatoes and apples. Sprinkle first with cinnamon, then with sugar; toss lightly. Add bay leaf, orange juice and margarine. Cover dish with foil. Bake about 60 minutes or until potatoes and apples are fork-tender. Remove bay leaf before serving. NOTES: Per serving: Calories - 209; Protein - 2g; Fat - 3g; Sodium - 50 mg; Carbohydrates - 45g; Cholesterol - 0 mg.
