Sweet Potato Pie Ingredients

FILLING1/4 ts Grated nutmeg
2 lg Sweet potatoes 1 c Skim milk
Powdered egg sub.; GRAPE NUTS PIE CRUST
2/3 c Sugar 1 1/2 c Grape nuts
1/2 ts Salt 1/8 c Maple syrup
1 ts Ground cinnamon A touch of water to make a
1/4 ts Ground ginger

Instructions for Sweet Potato Pie

I modified a sweet potato pie recipe from the cooking live program and cooked it up last week. Here it is as I cooked it. Filling: Nuke the potatoes, or bake at 350F for 1 hour. Cool, peel and puree in a food processor. Add the remaining ingredients in order and blend until smooth. Pour into your favourite ff pie crust and bake at 350F for 1 hour. I used a grape nuts pie crust: Press into a 9" pie pan. This pie also freezes very well...highly recommended!!
