Preheat oven to 400F. Lightly spray a medium size shallow baking dish with vegetable spray. Rinse chicken and pat dry. In a shallow pan, combine bread crumbs, onion powder, garlic powder, cayenne pepper and ginger. Dip chicken in yogurt, then into crumb mixture. Place in prepared dish. Bake uncovered, 45 to 50 min, or until tender. Cal: 254, Fat: 5 g.

This recipe was a nice change away from the standard egg dredge and the low calorie mustard alternative. My boyf hates mustard but really enjoyed this. I do agree, the cooking time needs to be no more than 30 minutes. I baked mine for 35 and the chicken seemed a bit dry. The spices were good but next time I will add a small pinch of ground mustard for that classic flavor.

This dish is very flavorful and has a nice kick to it! I would reduce the cooking time to 30 - 35 minutes next time I make it.

Coating has a nice bite, use 3/4 cup of bread crumbs I threw a lot away. Try to cut an equal thickness when halving and trim the ends, or they will over cook.
