FOR THE MARINATED FISH

Preparation

Place the marlin steaks in a non-metallic dish, then combine all the marinade ingredients, reserving one tablespoon of the olive oil. Pour over the steaks and leave to marinate for 1-2 hours or overnight.

Make the creamy pepper sauce by placing all the ingredients in a blender, then blend to a smooth creamy consistency. Heat the remaining tablespoon of olive oil in a large frying pan or griddle pan, then cook the marlin steaks for 3 minutes on each side, increasing the time for a thicker cut steak.

Divide the salad between two plates, top with a marlin steak and drizzle over the red pepper sauce. Serve immediately.

NOTES : A combination of spiced fish with sweet pepper sauce and crisp herb salad. Requires 1 hour or overnight marinating.

Delicious recipe for marlin fish steaks. Marinating for at least one hour helps the flavor absorb into the fish. I had the time so I left it on for 2 hours. It is also important not to overcook the fish. I baked my marlion steaks for 12 minutes since they were only 1 inch thick and they were tender and juicy. This recipe is a keeper!

I modified this recipe.

1. I cut the Cumin in half to 1/4 tsp

2. A search on the internet found this recipe elsewhere. 1 15 grams pac fresh is actually 1 15 gram pac of fresh coriander, finely chopped. I used 1 tbs of powdered.

3. 60 gram pac of herb salad, to serve, may be something commercially available but not in this area. A search on the internet for herb salad came up with this herb salad dressing with slight changes for what I had on hand. It was great.

2 tbs. wine vinegar

2 tbs. balsamic vinegar

1 clove garlic

1/2 tsp salt

1/2 tsp powdered mustard

1/8 tsp black pepper

1/2 tbs basil

1/2 tbs thyme

6 tbs olive oil

Using this for the herb salad? and preparing with the rest of the ingredients for the creamy pepper sauce as per the recipe turned out great. My wife loved it and I will definitely make this again. Perhaps with shark or swordfish next time.
