Simple Lemon Cake with Lemon Icing Ingredients

LEMON CAKE INGREDIENTS3/4 c Water
1 Box Yellow Cake Mix 1/4 ts Lemon Extract
1 pk (3-oz.) Lemon Gelatin 1 Or 2 Tbs. Lemon Zest;
3/4 c Vegetable Oil LEMON ICING INGREDIENTS
4 lg Eggs 4 tb Fresh Lemon Juice

Instructions for Simple Lemon Cake with Lemon Icing

Makes One 9x13 Cake Combine lemon gelatin and the yellow cake mix in a large mixing bowl, and blend well. Add the vegetable oil, eggs, water, lemon extract, and lemon zest. Mix lightly until well combined, and pour the cake batter into the prepared cake pan. Bake as directed on the yellow cake mix package. To prepare the icing, simply combine the confectioners sugar with the lemon juice in a small mixing bowl. When cake is baked, spread the icing on top while the cake is still warm. Quick Simple Lemon Cakes
for flavor and categorization

This recipe is very quick and simple. The cake came out very moist and delicious. I did not use the lemon juice just the lemon extract. I baked the cake in a bundt pan and topped with lemon icing. I would definitely make this wonderful cake again, my boyfriend loved it.
