Rustic Tuscan Mussel Stew Ingredients

1 cn Cannelini beans 20 Shelled mussels
4 Plum tomatoes Chopped basil
4 Plum tomatoes; pureed Chopped coriander
2 Cloves garlic; chopped 1 oz Diced focaccia bread
1 Red onion; chopped Olive oil
100 ml White wine Salt and pepper

Instructions for Rustic Tuscan Mussel Stew

Sweat the onion and garlic in the oil. Add the wine, beans, all the tomatoes and the mussels. Bring to the boil then simmer for about 3 minutes. Add the basil, coriander and focaccia and season well.
