- 2 sm Red potatoes; boiled, sliced
- 1/2 Boston lettuce head; leaves
- And dried
- 3 Cherry tomatoes; halved
- 6 oz Tuna; seared

Preparation
In a bowl, whisk together vinegar, mustard, anchovy paste, thyme, salt and pepper to taste. Add the oil in a stream, whisking, and whisk until the dressing is emulsified. In a bowl, toss the beans and potatoes with enough dressing to lightly coat. On a plate, arrange the lettuce, tomatoes, beans and potatoes, and tuna. Drizzle with more dressing and garnish with optional olives and capers. This recipe yields ?? servings.
