Pickled Onions Ingredients

2 lg Red onions; peeled and 2 tb Sugar
; sliced 6 Whole black peppercorns
1 tb Olive oil 4 Sprigs fresh thyme
3 c Red wine vinegar 2 tb Fresh thyme; finely chopped
1/4 c Olive oil

Instructions for Pickled Onions

1. Saut? the onions over low heat in 1 Tbsp. olive oil until soft. 2. Place the vinegar, 1/4 cup olive oil, sugar, peppercorns, and thyme sprigs in a large non-reactive saucepan and bring to a boil. 3. Add the onions to the hot liquid and simmer for 5 minutes. Remove the pot from the heat and allow the onions to steep for at least 2 hours or overnight (if storing overnight, place in a bowl and cover). 4.
