8 SERVINGS DAIRY-FREE The word pilaf refers to a whole variety of dishes made primarily with rice and one or more additional ingredients. In large saucepan, heat oil over medium heat. Add onion and cook, stirring often, until dark golden, about 10 minutes. Add rice and stir to coat. Season with salt and pepper. Add boiling stock and stir well. Cover and cook until rice is tender and liquid absorbed, 18 to 20 minutes. Remove from heat and let stand for 5 minutes, covered. Fluff rice with a fork, transfer to serving dish. I made this recipe as listed and came out with barely a cup of pilaf at the end - 1 serving, not 8. The sauce was very thick and salty (the vegetable broth here is highly salted) and it was tasty but I think maybe it was 4 cups, not 1/4 cup, of rice.
