Preparation

Preheat oven to 350 degrees and butter 24 muffin tins. In a large bowl whisk together flour, bran, baking powder, baking soda and salt. In a bowl whisk together sugar, eggs, molasses, buttermilk, butter and zest and add to flour mixture, stirring just until combined. Fold in raisins. Fill prepared tins 3/4 full with batter and bake in the middle of oven until golden and springy to touch, 20 to 25 minutes. Excellent recipe for those who control their diet. Calories might be a bit high (around 300 from my calculation) but you get your daily dose of bran and you can always make them smaller.

I was looking for a recipe like this to cut the cost on brand name bran bars; from my calculations the entire batch (24 muffins) costs as much as a box of brand chocolate bran bars. Amazing!

I would recommend you double the raisins; the end result gets even better imo as raisins are a very successful adding to this recipe in general.

For people with slow consumption like myself you can make the half batch and freeze the muffins; they were rather good after a week.

I give it a 4 as far as healthy eating and controlled diet is concerned.
