Ingredients

  • 250 g Dates; chopped
  • 185 g Sultanas
  • 1 400 gram tin sweetened
  • 150 g Plain flour
  • 150 g Wholemeal self-raising flour
  • 1/2 ts Bi-carbonate of soda
  • 60 g Glace cherries; halved
  • 1 tb Orange marmalade
  • 275 g Unsalted butter
  • 275 ml Water
  • 60 g Walnuts; chopped
  • 125 g Raisins

Preparation

1. Place raisins, dates, sultanas, butter, condensed milk and water in a large saucepan and bring to the boil. Simmer gently, stirring occasionally, for 5 minutes. Set aside to cool. 2. Pre-heat oven to 180deg.C. Line a 30cm X 20cm cake tin with Glad Bake. 3. Sieve flours and bi-carbobnate of soda into a large mixing bowl. Add fruit mixture with cherries and marmalade and mix well. Spoon into prepared tin and bake about 30-40 minutes or until golden on top and cooked when tested with a wooden skewer. Remove from oven and cool on a wire rack. Converted by MC_Buster. This recipe was really simple with minimal mixing and equipment needed. I particularly liked that it didn't require eggs but bound well and was exceptionally moist.
