This Mahi Mahi Ceviche was amazing! You can also add cooked shrip to the mix and it only makes things better. The recipe says that it is for one serving when in actually it yeilds enough for a family of five appetizer. It serves up great with fresh corn tortilla chips or fry up some corn tortillas whole, speard a thin layer of mayo over the top of one tortilla, and lays the ceviche over the top like a tostada and enjoy! A flavor explosion!!

From the recipe books of Chef Sergio Verduzco: Mix all the ingredients allow to marinate at least 1 hr. Drain off excess juice and refrigerate. Good for 3 days maximum. Discard leftover after 3 days. Posted to bbq-digest by DWilson on Nov 11, 1999, converted by MM_Buster v2.0l.

This was a great recipe! The hardest part of the prep is cutting the fish into tiny cubes, you don't really anticipate it to trake so long. However, the hard work paid off and everyone was raving about it! It's a great appetizer to enjoy on a hot day by the pool or relaxing in the shade.
