MARINADE


Preparation

Blanch peas in boiling water for 2 minutes. Drain and refresh under cold running water; drain well. Toss with tomatoes, chestnuts and onions. (MARINADE): Combine all ingredients, whisking lightly. Pour over vegetables and toss. Chill until serving time. Drain and spoon vegetables into center of rice mould, if desired. I had this reicpe years ago and lost it. Was so glad to find it again on line. This is a great looking & tasting dish and a great change from the usual vegtables sides. I like to take this to pot lucks. It just looks special. It is also great around Christmas time with the red and green coloring. It is also easy. With the grape tomatoes you don't really even need to cut them in half. If you do cut the tomatoes in half, be sure to drain a bit of the juice. They can turn the water chestnuts red.
