Hearts of Romaine with Blue Cheese And Caper Dressing Ingredients

3 tb Cider vinegar 3 tb Drained capers
2 1/4 ts Dijon mustard 1 sm Head romaine lettuce;
1/2 c Olive oil ; lengthwise
4 oz Maytag or Danish blue

Instructions for Hearts of Romaine with Blue Cheese And Caper Dressing

Mix vinegar and mustard in bowl. Gradually mix in oil. Add cheese and capers. Season with salt and pepper. Place 1/4 head romaine on each plate. Spoon dressing over and serve. Serves 4. Bon Appetit September 1993 Converted by MC_Buster. Converted by MM_Buster v2.0l.
