Hearty Navy Bean Soup Ingredients

2 c Dry navy beans 1 Onion; chopped
6 c Water or stock 2 Celery stalks; chopped
1/8 ts Baking soda 2 Carrots; chopped
1 Potato; grated 16 oz Tomatoes; canned, crushed or
1 Bay leaf Fresh ground pepper; to
2 Garlic cloves; crushed

Instructions for Hearty Navy Bean Soup

Wash and sort beans. Soak overnight or bring water, beans and baking soda to a slow boil. Let simmer 2 minutes and soak for one hour. Discard water and add 6 cups stock. Add potato, bay leaf, and garlic to beans and stock. Simmer beans for 1 1/2 hours or until nearly done. Add onion, celery and carrots. Simmer 20 minutes or until tender. Add tomatoes simmer 10 minutes.
