Preparation

Preheat the oven to gas mark 5, 375?F, 190?C. Season the fish with a little black pepper. Combine the sea salt with the egg white and 2fl oz water. Spread half the salt mixture on a baking tray or oven proof dish, then lay the fish on top. Put the tarragon on top of the fish and cover with the remaining alt mixture. Bake in the reheated oven for 20 minutes. Remove, break the top layer of salt away and serve the fish from it dish.
