Dry Fry Masala Chicken Ingredients

Olive oil

2 Skinless
chicken breast
1 ts Freshly grated root
ginger
; strips
1/4 Heaped tsp ground
cumin
Salt
; to taste
1/4 ts Ground
coriander
Baby green leaf
salad
; naan

Curry
paste; (any kind will
; bread, to serve
Instructions for Dry Fry Masala Chicken
1 Heat the oil in a large frying pan, add the onion and fry for a minute. Add the garlic and chillies and continue to fry for another few minutes until the mixture begins to turn golden brown. 2 Add the ginger, cumin, coriander and curry paste or garam masala to the pan, stirring until well combined. Be careful it doesnt burn. The mixture should turn quite thick and aromatic. 3 Stir in the tomato puree and tip in the chicken. Season with salt and cook for 4-5 minutes, stirring continuously, until the chicken is cooked and is a deep reddish brown hue. Season to taste with salt.
