Ingredients
- 2 Lean bacon rashers; diced
- 1/2 Brown onion; chopped
- 1/2 Red capsicum; diced
- 1/2 c Long grain rice
- 1/2 Clove garlic; chopped
- 1/2 c Canned tomatoes; drained and
- 1/2 Sprig thyme
- 1/4 ts Chilli paste
- 6 Green prawns; shelled and
- ; deveined
- 1/2 tb Oil
- Salt and freshly ground
- 1 c Chicken stock
Preparation
Preheat oven to 180C / 350F Heat oil in an ovenproof casserole pan and on medium heat stir-fry bacon, onion and capsicum for about 5 minutes. Add rice, stir-fry for about 1 minute and then add garlic, tomato, thyme and chilli paste. Season with salt and pepper and stir well. Add stock, bring to a simmer, cover and cook in the oven for 12 minutes. Add prawns and cook for a further 5 minutes before serving. Converted by MC_Buster.
