Crab Sauce over Squid Ink Pasta Ingredients

12 oz Peeled deveined shrimp; Salt; to taste
(or lump crabmeat; picked Cayenne pepper; to taste
2 tb Unsalted butter 2 Kirby cucumbers; seeded, and
1 tb Tomato paste Cut into 1/4" dice
1 tb Dry white wine 2 tb Finely-snipped chives
1 c White Sauce; see * Note 8 oz Cooked squid ink pasta

Instructions for Crab Sauce over Squid Ink Pasta

* Note: See the "White Sauce" recipe which is included in this collection. Saute shellfish in butter. Stir in tomato paste, dry white wine and evaporate liquid. Add White Sauce, bring to a boil and season to taste with salt and pepper. Fold in cucumbers and chives and serve over ink pasta. This recipe yields 4 servings.
