Corn Chowder Ingredients

1 tb Olive oil 225 g Fresh corn kernels; (8oz)
3 Hot chillies 3 lg Potatoes; diced
2 Cloves garlic 2 Roasted red peppers; diced
1 tb Ground cumin and coriander 2 tb Salt
2 Tomatoes; pureed 1 ts Ground black pepper
225 g Pureed sweetcorn; (8oz) 1/2 ts Cayenne pepper
225 g Pureed onions; (8oz) 4 tb Double cream
600 ml Milk; (1 pint) 1 tb Chives; snipped
600 ml Chicken or vegetable stock; 2 tb Flat leaf parsley; chopped

Instructions for Corn Chowder

Cook the hot chillies in the oil for 2 minutes. Add the garlic, spices, tomatoes, sweetcorn and onions. Cook for 10 minutes. Next add the milk and stock, corn kernels, potatoes, red peppers and seasonings. Cook until the potatoes are tender, about 20 minutes. Add the double cream, chives and parsley. Check seasoning and serve immediately. Converted by MC_Buster.
