Melt the chocolate in a double boiler over warm water. Stir until the chocolate melts. Whisk the egg yolks, 1/2 C of the cream, and vanilla into the melted chocolate. In a clean bowl, beat the egg whites with 1/4 C of the sugar until soft peaks form. Fold the beaten egg whites into the chocolate mixture. Whip the remaining cream until it forms soft peaks, and then fold that into the mixture. Chill until serving time.
