Carbonara Sauce Ingredients

175 g Smoked streaky bacon; 1 142 millilit single cream;
2 tb Sunflower oil 4 tb Chopped fresh parsley
250 g Mushrooms; sliced (8oz) 1/4 ts Grated nutmeg
3 md Size egg yolks; beaten Salt and freshly ground

Instructions for Carbonara Sauce

1. Fry the bacon in the oil until crisp. Remove the bacon from the pan. Drain all but 1 tablespoon of the fat from the pan. 2. Fry the mushrooms for about 4 minutes until soft. 3. Add the egg yolks and cream to freshly cooked pasta and toss well. 4. Mix in the bacon, mushrooms, parsley, nutmeg and seasoning. 5. Garnish with parsley and serve with parmesan cheese.
