Brad Maules Chocolate Creme Brulee Ingredients

15 Egg yolks Extra fine sugar
3/4 c Sugar Whisk
3/4 c Half and half Hand held blender
1 Vanilla bean Knife
1 qt Whipping cream 1 sm Pot
4 oz Semisweet chocolate Wooden spoon
Hot water Shaver

Instructions for Brad Maules Chocolate Creme Brulee

How to Prepare: Beat eggs yolks with 3/4 sugar. Split vanilla bean in half lengthwise and using tip of knife, scrape out small black seeds. Add seeds and beans to half and half and bring to boil. Stir small amount half-and-half mixture into egg yolk mixture, then return to remaining half-and-half mixture. Blend well. Stir in whipping cream. Remove vanilla bean. Thinly shave chocolate and place in 13 x 9 inch baking dish. Fill dish with cream mixture. Place dish in larger pan filled halfway with hot water. Bake in water bath at 325 degrees for approximately 60 minutes, or until set.
