Preparation

Combine the shallots, pepper, salt, dry tarragon and vinegar and reduce very slowly to 1/2 the quantity then leave to cool. Add the egg yolk and whisk thoroughly over a low heat until thickened. Add the diced butter and stir in thoroughly. To finish add fresh tarragon and serve on the side of a prepared steak. Converted by MC_Buster. Converted by MM_Buster v2.0l.

100% would make "Bearnaise Sauce" again.

A fine Bearnaise sauce, but not the best one I've ever made. The water diluted the flavor more than I'd like. Next time I make it, I'll omit the water and substitute in equal parts of white wine vinegar and white wine.

OK, bearnaise sauce sounds so fifties. But let me tell you -- it's darned good. Serve with grilled steak and asparagus, and pair with a good Merlot for a great, albeit rich, summertime outdoor meal.
