Basic Meatloaf Ingredients

1 Egg 1/2 ts Basil
2/3 c Milk 1/2 ts Coriander
3 c Soft bread crumbs 1 Onion; chopped
1 tb Prepared mustard 1/2 c Celery; chopped
1 3/4 ts Salt 1/4 c Parsley; chopped
1/4 ts Pepper 2 lb Ground meat

Instructions for Basic Meatloaf

Preheat oven to 350=F8F. In a large bowl, use a mixing spoon to combine egg and milk. Stir in bead cubes and let stand until bead absorbs milk. Use potato masher or fork to mash and stir mixture until bead is in very small particles. Stir in mustard, salt, pepper, basil, coriander, onion, celery and parsley. Add ground meat and mix well with spoon or hands. Using hands, press mixture into a 9 x 5" loaf pan. Bake for 55 minutes. Slice and serve. I substituted ground buffalo for beef and it turned out great. My husband told me it was better than his mother's meatloaf. For those of you who don't know a lot about buffalo meat it's fat content is usually 98.5/1.5. It even has less cholesterol than pork. We use it for any recipe that calls for ground beef and it really worked for this recipe. I added Worcestershire sauce because my husband won't eat meatloaf with out it.

I used 5 slices of white bread and cubed them very finely. This meatloaf turned out nice and moist instead of being tough, like most others I have tried. I left out the mustard.
